Tighter than what is commonly referred to as ‘crossflow,’ ultrafiltration removes undesirable color and flavors. For color removal in whites the technique is to remove the right amount while retaining as much of the desired flavor. When removing astringency and other off flavors in reds the trick is to not remove much color. Additional factors include the age of the wine, temperature, and operating pressure.
